Smoked Gouda Mac & Cheese w/ Bacon

This dish will be a bit of a departure from our normal mac and cheese.  It will be a creamy blend of several cheeses with smoked gouda being prominent. We will include pieces of fresh cooked hardwood smoked bacon and it will be topped with a bread crumb topping.
 
*Small sides will serve approximately 6-8 as a side dish and large sides will serve approximately 12-16*
