Melting Sweet Potatoes with Maple glaze and Walnuts

This is a fairly new technique of preparation for potatoes that makes for a bit of a crusty outer layer with a creamy inside.  We then top it with a maple glaze with walnuts.
 
*Small sides will serve approximately 6-8 as a side dish and large sides will serve approximately 12-16*
